Recipe: Fruit Crumble Yogurt

Serves 4

  • ¼ tsp sunflower oil, for greasing
  • 50g / 1¾ oz porridge oats
  • 2 tbsp pressed apple juice
  • 1 ½ tsp unrefined light brown muscovado sugar
  • 250g / 9oz fresh strawberries
  • 2 x 150g containers fat-free Greek yogurt

Method

  1. Preheat the oven to 200º. Lightly oil a non-stick baking tray. Put the oats in a bowl and stir in the apple juice and 1 tsp of the sugar. Stand for 5 minutes, stirring occasionally.

  2. Tip onto the baking tray and spread evenly with a wooden spoon. Bake for about 10 minutes until golden, stirring halfway through the cooking time. Remove from the oven and leave to cool.

  3. Roughly chop half the strawberries and set aside. Blend the remainder with the yogurt and remaining sugar using a stick blender (or in a food processor) until smooth. Stir in the reserved chopped strawberries and spoon into four dishes. Sprinkle with the oat crumble and serve.

This crunchy fruit yogurt is great as a breakfast or super-healthy dessert. Add some extra soft fruits if you like - blueberries and raspberries both work well. Press the fruit through a sieve before blending with the yogurt for a smoother texture if preferred.
