Recipe: Leek, Pepper and Pea Tortilla

Serves 4 as a light lunch or supper

  • 1 small onion, peeled and quartered
  • 1 small leek, trimmed
  • 1 red pepper, deseeded and halved
  • 1 tbsp virgin olive oil, plus extra for greasing
  • 1 small sweet potato, peeled and quartered lengthways (about 200g/7oz peeled weight)
  • 100g/3 1/2oz frozen peas
  • 6 medium free range eggs
  • 4 tbsp semi-skimmed milk
  • Freshly ground black pepper
  • A large, lightly dressed salad, to serve
Method
  1. Fit the food processor with the coarse slicing blade. Slice the onion, leek and pepper using the pulse setting - don't worry if some of the pieces are uneven, this recipe is meant to be rustic.

  2. Heat the oil in a medium non-stick frying pan and cook the onion, leek and pepper for 4-5 minutes until softened and lightly coloured, stirring occasionally. Slice the sweet potato using the same blade and add to the pan. Stir in the peas and cook together for 5 minutes, turning the vegetables regularly.

  3. Rinse the food processor bowl and fit with the single blade. Add the eggs, milk and a little ground black pepper. Blend on setting 7 until well combined. Pour the eggs over the top of the vegetables and cook on a low heat for 10 minutes until the eggs are almost set. Preheat the grill to hot.

  4. Place the frying pan under the grill, being carefully to avoid heating the handle, and cook until the egg is set and lightly browned - about 2 minutes. Loosen the edges of the omelette with a round-bladed knife and turn out onto a board. Cut into wedges and serve hot or cold with a lightly dressed salad.

Health Facts

Eggs are one of the few dietary sources of vitamin D, which is essential for the healthy bone formation. Sweet potatoes are excellent sources of betacarotene, a potent anticancer nutrient. They also contain vitamins C and E, which also help fight harmful free radicals (oxygen molecules that damage the body). Red peppers are an excellent source of vitamin C and betacarotene.
