4 ripe peaches
2 cups strawberries, hulled and quartered
2 pieces preserved ginger in syrup, drained and minced
2 tablespoons sugar
1/3 cup toasted hazelnuts
1/2 cup of all-purpose flour
pinch of ground cinnamon
2 tablespoons cold butter, cut into pieces
1/4 cup raw brown sugar
2 tablespoons white sugar

Directions

Preheat the oven to 400F.

Pit and roughly dice the peaches, then place in a non-stick pan with strawberries, ginger, sugar and 2 tablespoons water.

Cook over high heat for 2 minutes until the fruit is slightly softened, but not mushy. Tip into a bowl and let cool.

For the crumble, lightly crush the hazelnuts in a bowl with the end of a rolling pin.

In a large mixing bowl, stir together the flour and cinnamon.

Using the tips of your fingers, rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Stir into the flour mixture the crushed hazelnuts and raw brown sugar.

Spoon the softened fruit into four wide ramekins or individual baking dishes.

Top with the crumble mixture, scattering it evenly, and stand the dishes on a baking sheet.

Bake for 15 to 20 minutes or until the topping is golden brown and crisp.
