Ingredients

1 batch homemade pie dough, shaped into a disk and chilled (see above)

1 pound strawberries, hulled and sliced

1/4 cup sugar

2 teaspoons cornstarch

1 teaspoon of lemon zest (about half a lemon)

1 teaspoon vanilla

1 large egg yolk (beaten with 1 teaspoon of water)

4 cups whipping cream or crème fraîche (optional)

Directions

Preheat oven to 400F. On a lightly floured surface, roll out pastry to 1/8-inch thick.

Cut into about 6-inch rounds, and place on parchment paper-lined baking sheets. Chill.

Gently toss strawberries with vanilla, zest and cornstarch. Let stand five minutes.

Place strawberries on rounds, overlapping slices slightly and leaving one-inch border on outside. Pleat edges of dough over berries. Chill for 30 minutes.

Brush dough with egg wash and sprinkle with sugar. Bake for 30 minutes or until golden brown and bubbling. Serve with whipped cream or crème fraîche.
