5 pork loin chops

2 eggs, beaten

1 cup flour

Salt

Pepper

2 teaspoons paprika

3/4 cup breadcrumbs

3/4 cup Panko breadcrumbs

Olive oil or safflower oil, to fry

Directions

Cut pork loin in pieces 1.5 inches thick, if pork loin is whole. Flatten with meat pounder to 1/4 thick.

Flour meat on each side, season meat with salt, pepper and paprika.

Dip in egg, then dredge in mixture of breadcrumbs and Panko.

Heat olive oil in skillet over medium to medium-high heat. Fry each cutlet, turning once, until golden brown. Serve immediately.
