Makes 2 9-inch pie crusts.

Ingredients

2 1/2 cups all-purpose flour

1 teaspoon salt

1 cup unsalted butter, cut into 1/2-inch cubes

Scant 1/2 cup ice water

Directions

In a large bowl, combine flour and salt.

Cut in butter until mixture is coarse crumbs.

Stir in water until clumps form.

Shape into ball; divide dough in half.

Wrap in plastic, and refrigerate for 4 hours or overnight.

Roll out dough on a floured counter.

Use as directed in pie recipe.
