Ingredients

4 Yukon Gold potatoes, scrubbed

4 cloves of garlic, thinly sliced

4 tablespoons olive oil

2 tablespoons unsalted butter, melted

Directions

Preheat oven to 375F.

Place each potato on a wooden spoon, and slice as thinly as possible, taking care not to slice through bottom.

Insert garlic slivers into accordion folds of potatoes. Drizzle olive oil into slices, and massage it into the surface of potatoes. Sprinkle with salt and pepper.

Bake for about 50-60 minutes until edges are browned and crispy. Drizzle melted butter over top and bake for a further ten minutes. Serve warm.

Hasselback potatoes are delicious warm and sprinkled with crumbled thyme, rosemary or bacon.
