Ingredients

1 medium onion

2 cloves garlic

5 large potatoes

1.5 litres water

6 ounces Portuguese chouriço (sweet)

2 cups kale (or collard greens)

extra virgin olive oil, as needed

salt and pepper, to taste

Directions

Peel and chop onions, garlic and potatoes.

In a large pot over medium heat add a splash of olive oil, and sweat onions and garlic until tender.

Add potatoes to pot and pour in water.

Bring to a boil, cover and let simmer for 20 minutes, until potatoes are soft.

After 20 minutes remove from heat and use a blender to puree the mixture.

Cut away tough stalks from collard greens, roll up the leaves and slice finely into very thin ribbons.

Stir collard greens into soup and simmer for 10 minutes, until collard greens are tender.

Stir in a splash of olive oil. Season with salt and pepper and return to medium heat.

Slice chouriço and sauté in a skillet until golden on both sides.

Ladle soup into bowls and top with chouriço slices, drizzle olive oil over each bowl and serve.
