This is such a fun, rustic recipe. It might get slightly messy when sharing out, but that is part of the joy. Make sure to squeeze out the excess water properly from the tofu to avoid a watery sauce. If you don’t have a large bread roll, make this with individual smaller ones instead.

Ingredients

1 onion, roughly chopped

1 red pepper, coarsely chopped

1 celery stick, chopped

2 tablespoons extra virgin olive oil or vegetable oil

2 garlic cloves, crushed

400 ml / 1 2/3 cups passata / strained tomatoes

2 teaspoons vegetarian Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon ground cumin

1 tablespoon ketchup

1 tablespoon cider vinegar

1 generous tablespoon dark brown sugar

2 tablespoons barbecue sauce

400 grams / 14oz firm tofu, rinsed, drained, patted dry and cut into bite-size cubes

400-grams / 14 oz bread loaf

sea salt and freshly ground black pepper

grated cheese, to serve

Directions

Put the onion, red pepper and celery in a food processor and blend until minced. Alternatively, chop very finely.

Combine in a large frying pan with the oil and cook until soft, stirring often. Add the garlic and cook for 1 minute.

Stir in the passata/strained tomatoes, Worcestershire sauce, oregano, cumin, ketchup, vinegar, sugar and barbecue sauce. Let simmer for 10 minutes.

Taste and adjust the seasoning. Stir in the tofu and simmer, covered, for about 15–20 minutes more.

Meanwhile, slice the top off the loaf and set aside. Hollow out the loaf by pulling out the soft bread, shred and stir into the tofu mixture.

Preheat the oven to 200ºC (400ºF) Gas 6.

Set the bread loaf on a piece of kitchen foil large enough to wrap around the bread. Fill the hollow loaf with the tofu mixture and replace the bread lid.

Enclose with the foil and bake in the preheated oven for 20 minutes.

Remove from the oven and serve warm, with grated cheese.
