16 oz. elbow macaroni or other small pasta

1 lb smoked bacon

1 small onion, diced

4 tbsp butter

4 tbsp all-purpose flour

5 cups 2% milk (reserve 1 cup for the end)

2 cups shredded old cheddar cheese (or another cheese you prefer)

1 cup shredded monterey jack cheese (or another cheese you prefer)

1/2 cup mozzarella cheese

1/2 cup shredded Parmesan cheese

1/2 cup breadcrumbs


Preheat oven to 350F. Grease a 9 x 13 pan with cooking spray or oil.

Prepare macaroni according to package directions for "al dente." (about 7 min) Drain.

In a large, heavy saucepan, fry bacon until crisp. Remove to paper towels to drain. Cut in bite size pieces.

Add onions to bacon drippings. Sauté until soft, 3-5 minutes.

Add butter to saucepan. Whisk in flour. Cook, whisking constantly, 1-2 minutes.

Add milk, and cook until thickened, stirring occasionally.

Stir in the cheddar, monterey jack and mozzarella cheeses. Remove from heat when cheese melts completely.

Toss the cheese sauce with the pasta. Add bacon. Toss.

Transfer to prepared baking dish. Add remaining 1 cup of milk over top (I find this helps prevent the mac & cheese from drying.

Combine Parmesan cheese and bread crumbs in a small bowl and sprinkle over top.

Bake, uncovered, 15-20 minutes until top is golden.
