So this recipe comes courtesy of my girlfriend Carol. She floors me with how well she eats and exercises - and it’s great because it inspires me!

The problem is, I LOVE comfort foods… So for me, it’s hard not to dive into the pasta or cheese.

That is why I am currently OBSESSED with this “great for summer bikini bod & comfort food cravings” dish.

Seriously, I have been living off of it lately! Try it and you'll see why.

Super easy and more than super healthy! Here we go.

Ingredients

1 head of cauliflower
1/4 cup of Greek yogurt
1 garlic clove
1/2 lemon
Diced chives (to taste)
Salt & pepper

Directions

See the ingredients? I mean really… HOW HEALTHY is this?! I swear, even if you don't like cauliflower, you will love this!

Literally just steam the heads, mash them and add the other ingredients.

If you want a bit of cheese love you can add 3 tablespoons of grated Parm!  And think of the variations for this one... endless! :)
