Okay, that might be a slight exaggeration...maybe my addiction to Mexican food isn't thatbad, but I honestly feel that sometimes my friends need to stage some sort of food intervention for me!

So, when an opportunity arises for me to eat Mexican food for breakfast, it's pretty much a dream come true!

This week I was having a serious Mexican food craving (call it withdrawal) after my visit to Red Iguana in Salt Lake City. So, I whipped up this amazingly easy-to-make and delicious huevos rancheros recipe and it absolutely hit the spot!

I love the combination of tangy peperoncini mixed with the creamy avocado and velvety egg. AMAZING! Anyway, I highly recommend trying this recipe out over the weekend.

I'm not going to say that it's life changing, but it will definitely put all of your previous breakfasts to shame...or at least it will taste really good. Either way, I think you'll enjoy it AND it helps that it's pretty darn healthy as well! WOOOO! 

Ingredients

Flour tortilla, ancient grain toast or whole grain pita as base

Refried beans

Fresh salsa

Fresh avocado

Egg

Cilantro

Handful of light mozzarella cheese (or the real thing if you're not trying to get rid of your muffin top!) 

Peperoncini on the side! 

Directions

This one is an EASY one and breaks up the mundane eggs after eggs after eggs.

Simply start to baste or soft poach your egg; while this is going on, in a separate pan, heat up your tortilla and spead some refried beans to heat up as well. At this point, you can add some mozzarella cheese and let it melt (yummmm). 

Take the tortilla off the pan and onto a plate, top with fresh salsa, sliced avocado and as soon as your egg is at its desired hardness, pop that baby on there and garnish with cilantro (LOTS OF IT!), salt and pepper & a side of peperoncini for good measure! 

Enjoy!! Or, as they say in Mexico, buen provecho!!!
