Most people will tell you that life should be about balance: balance work & play, balance exertion and relaxation, and balance healthy choices and indulgences.

But I'm a little different. I say, screw balance... Why not combine it all in one!!

My entire life is one big mish-mash of work & play, and although I try to be healthy, life wouldn't be the same without some naughty little indulgences, right??

In a weird way, this sandwich is really quite the little symbol of my life: fresh nutrient-rich kale from my garden (thank you, Mae's!), fresh juicy local BC Tree Fruits Macintosh apples (always a supporter of my home turf), BACON (bacon is ALWAYS a yes), sharp cheddar cheese, whole grain bread, and you've got yourself a perfectly deliciously balanced sandwich!

And it's SO easy. Here are the deets. 

Ingredients

Multi-grain bread

White sharp cheddar cheese

Mayo

Sliced Macintosh apples

Bacon - cooked (obviously..)

Kale

Directions

Toast the bread, spread on a thin layer of mayo & add cheese to either one of both halves.

Throw the cheesed (is that a word??) bread in the oven for a couple moments on broil until the cheese is melted. Then, take it out, add the bacon, apple slices and kale. YUM!!
