Asiago-Crusted Scones

  • 2 cups all purpose flour
  • ¼ cup white sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter
  • 2/3 cup buttermilk
  • 1 tsp vanilla extract

Directions:

I mix together the flour, sugar, baking powder, baking soda and salt. I cut the butter into small pieces and blend into the flour mixture. I add buttermilk and the vanilla extract and mix together. I separate the mixture into small pieces and place them on the baking sheet and bake at 400 degrees for about 20 minutes. I grate the Asiago cheese and during the last 7 minutes or so I sprinkle this on top of the scones.

Blueberry Compote

3 tbsp sugar
1 tsp cornstarch
3 tbsp water
1 cup blueberries
1 tsp lemon juice

Directions:

Whisk together sugar and cornstarch in a saucepan. Add water and blueberries and cook over medium-low heat, stirring occasionally, until the mixture is thickened and the blueberries begin to break up. Remove from heat and stir in lemon juice. Let cool.
