Beet & Pear Salad topped with Honeyed Goat Cheese, Mint & a Simple Lemon Dressing

Ingredients:


  • 1 golden beet
  • 1 red beet
  • 2 pears
  • 1 small bunch chopped, fresh mint
  • 1/3 cup goat cheese
  • Juice of half a lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste

Directions:

  1. -Cut the beets and pears into matchsticks (use a mandolin if you have one) and place in a salad bowl. Add the fresh mint.
  2. -Combine the lemon juice, olive oil, pinch of salt and pepper and pour over beets, pears and mint.
  3. -Toss salad lightly and mound onto plates.
  4. -Scatter each serving with about a tablespoon of goat cheese (I use a honey flavoured one) and serve.
