Ingredients
- 3 Tbsp Compliments Extra Virgin Olive Oil
- 2 Cloves Garlic, Chopped
- 2 Medium Red Onions, Chopped
- 1 Tbsp Ginger Root, Finely Grated
- 2 Medium Carrots, Chopped
- 2 Medium Sweet Potatoes, Peeled And Cubed
- 4 Beets, Peeled And Cubed
- 2 Portobello Mushrooms, Sliced
- 1 Green Bell Pepper, Chopped
- 1 Red Bell Pepper, Chopped
- 3 Cups Vegetable Stock
- 2 Tbsp Mild Curry Powder
- 2 Tbsp Compliments Soya Sauce
- 1 Tsp Hot Sauce
- 1/2 Tsp Dried Basil Or 1Tsp Chopped Fresh
- 1/2 Tsp Dried Thyme Or 1 Tsp Chopped Fresh
- 1 Cup Compliments Creamy Coconut Milk
- 1/2 Cup Fresh Coriander
Directions:
Heat the oil in the pan. Sauté the garlic, onion and ginger for about 3 to 4 minutes.
Add the remaining ingredients, except the coconut mild and coriander. Bring to a boil; reduce the heat. Simmer the stew for about 20 minutes, or until the vegetables are tender.
Add the coconut milk. Cook for another 3 to 4 minutes. Add the coriander. Stir. Serve immediately.
