Ingredients

  • Arugula
  • Spinach
  • Chopped Radicchio
  • Red Wine
  • Allspice
  • Balsamic Vinegar
  • Salt
  • Pepper
  • Triple Cream Brie

Directions

  1. Blend arugula and spinach with chopped radicchio
  2. Slice red pear and add to ½ cup white wine and a pinch of allspice and poach on medium heat for 3 - 5 minutes– remove pears and set on side plate
  3. Mix ¾ cup balsamic vinegar and ¼ cup red wine and reduce until thick
  4. Remove balsamic reduction and add 2 tablespoon of olive oil, a pinch of salt and fresh ground pepper
  5. Toss arugula, spinach and radicchio salad in vinaigrette, plate and add pear and brie slices
