Ingredients

  • 2 Shallots Or 1 Onion, Chopped
  • 4 Cups Compliments Cranberry Juice 100% Blend
  • 1 Cup Strawberries, Chopped
  • 1/2 Fresh Parsley, Chopped
  • 1/2 Cup Red Wine
  • 2 Tbsp Lemon Juice
  • 1/2 Tsp Dried Basil Or 2 Tbsp Chopped Fresh
  • 2 Large Chicken Breasts, Boned And Skinned
  • 4 Bunches Arugula
  • 1/2 Cup Strawberry Dressing With Lemon & Herbs

Directions:
In the sauce pan, combine all ingredients, except the chicken, arugula and dressing. Bring to a boil; reduce to a simmer.

Add the chicken, making sure that it is covered with the liquid. Poach for 15 minutes, or until the chicken is cooked through. The chicken should have a pinkish hue.

Slice the chicken. Place the arugula on 4 plates. Top with the chicken slices. Drizzle each salad with the dressing. Serve warm.
