Ingredients

  • 2 Tbsp Olive Oil
  • 1/2 Cup Bacon, Chopped
  • 1 Cup Onions, Chopped
  • 2 Cloves Garlic, Minced
  • 1 Cup Carrots, Chopped
  • 1/2 Cup Celery, Chopped
  • 1 Cup Sweet Potatoes, Chopped
  • 3 Cups Apples, Peeled And Chopped
  • 1 Tsp Allspice
  • 1/2 Cup Compliments Dried Apricots, Chopped
  • 2 Tbsp Curry Paste
  • 2 Tbsp Honey
  • 1 Lemon, Juiced
  • Salt And Pepper To Taste
  • 4 Cups Stock
  • 2 Cups Compliments Organic Apple Juice
  • Blue Cheese Or Stilton For Garnish
  • Chopped Chives For Garnish

Directions:
In a large soup pot sauté the bacon and onions in the olive oil until the onions soften.

Add garlic, carrots, celery and sweet potatoes and cook for about 8 minutes, until slightly softened.

Add the apples, allspice, apricots, curry paste, honey, lemon juice, and salt and pepper. Cook for another 3 minutes.

Add your stock and apple juice and bring to a boil. Reduce to a medium heat and cook for 20 to 25 minutes, until the apples are completely cooked.

Remove from heat and allow to cool. Puree into a smooth soup. Return to pot and reheat. Serve hot.

Variation:
If you don't have apricots use dates or prunes. And if you're short on potatoes use cooked rice, 1 cup.
