Base

Ingredients
  • 4 tablespoons sugar
  • 1 large egg
  • 100 grams margarine
  • 300 ml flour
  • 1 teaspoon baking powder

Filling

  • 1 large egg
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 200 ml sour cream
  • 1/2 kg rhubarb
Directions For the base:
  1. Cream the egg and sugar.
  2. Add room temperature margarine and continue to cream.
  3. Combine baking powder and flour thoroughly; add to creamed mixture.
  4. Place dough in a cake pan (dough can be rolled out or spread evenly by hand) on the bottom and up the sides of the pan.
For the filling:
  1. Cream the egg and sugar.
  2. Add sour cream and cinnamon and mix thoroughly.
  3. Pour the filling into the cake pan (with the dough).
  4. Place rhubarb pieces on top of the filling and top with a sprinkling of sugar.
  5. Bake at 200°C for 25 to 30 minutes.
