Ingredients

  • 2 Cups Compliments Chicken Thighs, Baked And Pulled
  • 1 Head Romaine Lettuce, Roughly Chopped
  • 2 Cups English Cucumbers, Diced And Peeled
  • 2 Roasted Red Peppers, Finely Chopped
  • 1 Yellow Pepper, Diced
  • 2 Cups Tomatoes, Diced
  • 1/2 Cup Compliments Fresh Sun Dried Tomatoes, Softened And Chopped
  • 1/2 Cup Olives, Finely Chopped, Pitted
  • 1/2 Cup Fresh Coriander, Chopped
  • 1 Lime
  • 1 Lemon
  • Salt And Pepper To Taste
  • 1 Avocado, Sliced
  • Garnish With Fresh Coriander And Lots Of Freshly Groung, Black Pepper

Directions:
Wash and dry lettuce. In a large mixing bowl combine lettuce, cucumber, roasted peppers, yellow peppers, diced tomatoes, sun-dried tomatoes, olives and coriander.

Squeeze the lemon and lime juice directly onto the mixture. Add the olive oil and lots of salt and pepper. Mix well.

Transfer salad to a large serving platter or bowl. Arrange sliced avocado on top. Serve at room temperature.
