Ingredients
- 2 Cups Compliments Chicken Thighs, Baked And Pulled
- 1 Head Romaine Lettuce, Roughly Chopped
- 2 Cups English Cucumbers, Diced And Peeled
- 2 Roasted Red Peppers, Finely Chopped
- 1 Yellow Pepper, Diced
- 2 Cups Tomatoes, Diced
- 1/2 Cup Compliments Fresh Sun Dried Tomatoes, Softened And Chopped
- 1/2 Cup Olives, Finely Chopped, Pitted
- 1/2 Cup Fresh Coriander, Chopped
- 1 Lime
- 1 Lemon
- Salt And Pepper To Taste
- 1 Avocado, Sliced
- Garnish With Fresh Coriander And Lots Of Freshly Groung, Black Pepper
Directions:
Wash and dry lettuce. In a large mixing bowl combine lettuce, cucumber, roasted peppers, yellow peppers, diced tomatoes, sun-dried tomatoes, olives and coriander.
Squeeze the lemon and lime juice directly onto the mixture. Add the olive oil and lots of salt and pepper. Mix well.
Transfer salad to a large serving platter or bowl. Arrange sliced avocado on top. Serve at room temperature.
