Palacsinta (Pancakes)
- 24 pancakes:
- 2 large eggs
- 2 1/4 cup all purpose flour
- 600 ml milk
- 200 ml soda water
- 1 tbsp vegetable oil
directions:
- Mix the flour, eggs and some of the milk into a mixing bowl. Mix ingredients well while slowly adding the rest of the milk. This should all be done with an electric mixer. Keep mixing until the dough is smooth and it's not too runny and not too thick. Mix in a tablespoon of vegetable oil. This helps the dough not stick to the pan. At the end, add in the mineral water while mixing, as this will help make the dough lighter. Let is stand for an hour.
- When baking, first moisten the pan with a little bit of oil and let the pan warm up. Use a large scoop to add dough into frying pan. Turn the pan and let the dough run over the whole surface of the pan to create a thin layer. Bake it until the colour starts to turn into a very light, spotty brown shade. This happens very quickly so don't leave the stove unattended. Gently shake the frying pan from side to side to loosen the pancake from the bottom, flip the pancake in the air and catch it with the frying pan, baking the other side. This takes very little time. Place pancakes on plate and cover with another plate to keep it hot and soft. After baking the first pancake you will see if you need to add more milk or soda water to achieve proper consistency. At that stage you don't have to use the electric mixer. A plastic spoon will do the trick. Repeat all steps until you run out of dough. It's important to keep in mind that while baking the pancakes you should stir the dough from time to time as the flour tends to settle at the bottom.
- Mix ground walnuts with apricot jam and fill the pancakes. Roll pancakes and drizzle with melted dark chocolate and top with fresh blueberries. Serve hot or cold.
