Ingredients

  • 1/4 Cup Compliments Extra Virgin Olive Oil
  • 1 Cup Onions, Diced
  • 1 Cup Carrots, Diced
  • 1 Cup Red Pepper, Diced
  • 1 Tsp Fresh Ginger, Finely Chopped
  • 1 Clove Garlic, Chopped
  • 1 Lb Lean Ground Beef
  • 1/2 Cup Hoisin Sauce
  • 1 Lime, Juiced
  • 1 Tbsp Compliments Orange Juice from Concentrate
  • 1 Tsp Hot Sauce
  • 1 Tsp Cinnamon
  • 1/2 Cup Fresh Basil, Chopped
  • Salt And Pepper To Taste
  • 1 Head Iceberg Lettuce
  • 1/2 Cup Peanuts, Chopped
  • 1/2 Cup Green Onions, Chopped

Directions:
In a large sauté pan cook the onions in the olive oil until soft.

Add the carrots, red pepper, ginger and garlic and cook for 8 to 10 minutes.

Add the ground beef and cook until it starts to brown, approximately 10 minutes.

Add the hoisin, tamari, lime juice, orange juice concentrate, hot sauce, cinnamon, basil and salt and pepper. Cook over medium heat until the sauce has reduced slightly and the meat is fully cooked, approximately 10 to 12 minutes.

While your beef is cooking separate your iceberg lettuce leaves. Each one of these emerald jewels will act as your shell, essentially emulating a spring roll.

Put about 2 tbsp of the beef mixture into the centre of the lettuce leaf. Sprinkle with some peanuts and some green onions, and roll up tight, folding in the sides. Serve immediately and experience ecstasy.

Be creative - throw in fresh herbs, dried fruit, nuts. Knock yourself out, mama!
